Hi, Friends! We arrived home on Tuesday and have squeezed so much into this week it feels like we’ve already been in Virginia for a month. As you can imagine, my life has looked a little bit like this: laundry, folding, decluttering, grocery shopping, cooking, cleaning up cooking mess and work. That’s pretty much what my life looks like all the time but the level of laundry and organizing after being gone for an entire month is UNREAL. Unreal, guys.
We’re looking forward to our first weekend home starting with date night, moving into an extremely productive Saturday and heading into Church on Sunday. I’m going to be trying out this recipe so I’ll be sure to report back and let you know how it went!
Here are a few things on my mind:
I gave up sugar and bread until early April so I’ve taken this time to be really prayerful about what I should be eating. I’ve shared before the difficulty I’ve found with being a plant based eater and I’m really just ready to be confident I’m getting all the nutrients I need while actually enjoying my food. It’s been a long journey, but God has been so gracious. I had the lunch of my dreams the other day and just had to share! (The photo from above is half of it. Yummm.)
GG crackers (which you can find here, Chive Kite Hill Vegan Cream Cheese (almond based) topped with cucumbers has quickly become my favorite! Radish, sprouts and red pepper also make a super yummy topping.
I had a couple of those with my favorite protein shake lately which is ice, Ripple milk, vanilla bean protein powder (vegan, pea protein with tons of greens in it) one banana, a scoop of peanut butter, a scoop of Maca powder, a scoop of chia seeds and some ice. It’s my favorite lunch!
I saw this trailer the other day and immediately sent it to a friend. It feels like one of those movies secretly based on your life- when you’re watching someone act out scenes you’ve actually lived. It’s not ideal, it’s not aspirational, but it’s the most relatable and vulnerable experience to watch this thing so I can’t even imagine what the actual movie will be like! I’m so excited to see this raw ode to motherhood.
