It’s Fall…but it’s hot. Real hot. My mind says chili, my body says ice chips. If tend to ignore my body come late September and just wear, eat and do what my mind says is right. Wear the sweater! Make the beef stew! Pick the pumpkins! The weather will catch up eventually, right? Fall also means school and activities are in full swing so I make a maximum of four dinners a week. We eat leftovers the other days and O and I usually go out for dinner on Fridays. Here is what our dinners will look like this week as we leave September and head into October.
My calendar is always the most full from October-December but it’s also the time of year I want to make delicious, elaborate meals. Despite my best intentions, Pinterest boards and magazine tear outs the soccer practices and endless events can sometimes mean we have leftovers for dinner one too many times (anyone else?) I’m so glad to have built up a little bit of a repertoire of easy meals to make in advance so that a jam-packed day doesn’t mean jam and almond butter sandwiches for dinner.
The combination of Egg Nog and Hot Chocolate no longer being acceptable to kick off the day mid-January and Valentines Day creepin’ around the corner has me super into this beet smoothie in the morning!
